Diary of a picky eater
Hello! My name is Merri, and this is my first attempt at blogging! I have a passion for delicious food, but have always been a picky eater. I was diagnosed with Celiac Disease over 10 years ago, so my diet is strictly gluten free. Combine this with my hatred of vegetables (and most things healthy) and you get a limited palette to work with. I have also had some health issues involving several non-cancerous tumors. While I am incredibly thankful they have all been benign, it is still an enormous stress, and financial burden. After 4 tumors in 5 years, I decided enough was enough and began to make some changes in my life and diet, in hopes of avoiding this and several other ailments. After one year of making tactical changes in my diet, I have avoided any new tumors, noticed improved overall health, and actually started to NOT hate (some) veggies! I have also uncovered a passion for finding foods that can heal and prevent diseases, all while contributing to the enjoyment factor of my meals. Join me on my journey to combine healthy foods into fun meals that don't skimp on taste!
