Breakfast sandwich

This grain free breakfast sandwich is super easy to make, and you can do it all in the microwave! If you have a toaster oven, you should definitely toast the bun! Otherwise, you can sear it in a pan to get it a little crispy.
I’m not sure if it’s a local or national brand, but I use the Beeler’s ham on my sandwich–it’s made without nitrates. I get it from my local health food co-op, and they slice it fresh on the spot. That way I can ask for it to be sliced nice and thick 🙂

For the bun:
1 egg
1 T almond flour
1 T coconut flour
1 T milk
1 T oil (I use avocado oil)
1/8th tsp baking soda
sprinkle of salt

Mix all ingredients thoroughly, and pour into a greased microwave safe container. A 4 inch ramekin works amazing, but any round glass container will work. Cook for 45 seconds to 2 minutes, depending on the size of your container and microwave power. It’s done when you can’t see any liquid on top. Let cool for a few minutes, then remove from container and cut in half. You can toast the bun while you make the egg:
Crack 1 egg into a greased microwave safe dish or mug. Sprinkle some salt and pepper on top, and cook for 45 seconds to 1.5 minutes, until done to your liking. I like my eggs a little soft, so I cook for less time.

You can dress up your sandwich however you like, I put cheese, 2 slices of ham, and a dab of mayo on mine.
